Ingredients:
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 1/2 teaspoon almond extract optional
Instructions:
In a bowl, whisk together flour, baking powder, and salt
In a separate large bowl, cream together butter and sugar until light and fluffy
Beat in the egg, followed by the vanilla and almond extracts
Gradually add the dry ingredients to the wet ingredients, mixing until just combined
Divide the dough in half and shape each half into a flat disc
Wrap in plastic wrap and chill for at least 2 hours
Preheat the oven to 350F 175C and line baking sheets with parchment paper
Roll out one disc of dough on a floured surface to about 1/4-inch thickness
Use cookie cutters to cut out desired shapes and transfer them to the prepared baking sheets
Gather the scraps, re-roll, and cut out more cookies
Repeat the process with the second disc of dough
Place the cut-out cookies in the refrigerator for about 15 minutes to firm up
Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden
Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely
Once the cookies are completely cool, you can decorate them with icing, sprinkles, or any desired toppings
