This recipe combines the fresh flavors of ripe heirloom tomatoes, crisp cucumber, and sweet bell pepper, with a hint of garlic and tangy vinegar. Ingredients:
- 4 large heirloom tomatoes, chopped
- 1 cucumber, peeled and chopped
- 1 red bell pepper, chopped
- 1 small red onion, chopped
- 2 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon fresh lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- Fresh basil leaves, for garnish
Instructions:
In a blender, combine the tomatoes, cucumber, bell pepper, onion, and garlic
Blend until smooth
Add olive oil, red wine vinegar, lemon juice, salt, black pepper, and cayenne pepper
Blend until well combined and smooth
Transfer the gazpacho to a bowl, cover, and refrigerate for at least 2 hours to chill
