Ingredients:
- 1 bottle of Napa Valley red wine Cabernet Sauvignon or Merlot
- 2 duck breasts
- 1 cup of fresh blackberries
- 1/4 cup of balsamic vinegar
- 2 tablespoons of honey
- Salt and pepper to taste
- Fresh rosemary sprigs for garnish
Instructions:
Start by heating the oven to 400F 200C
Make crisscross cuts in the duck breasts skin, being careful not to cut into the meat
Add a lot of salt and pepper to the duck breasts
Set the pan over medium-high heat and add the duck breasts, skin side down
After 5 to 6 minutes, the skin should be golden brown and crispy
After 2 minutes, turn the duck breasts over and cook for another 2 minutes
Put the duck breasts in a baking dish and roast them in a hot oven for 8 to 10 minutes, or until they are medium-rare or done to your liking
Put the blackberries, balsamic vinegar, and honey in the same pan
For about 5 minutes, stir the mixture every now and then over medium-low heat until the blackberries begin to break down and the sauce gets thicker
After taking the duck breasts out of the oven, let them rest for a few minutes
Then, cut them into pieces
Thinly slice the duck breasts and serve them with the blackberry balsamic sauce on top
Serve with a glass of Napa Valley red wine and fresh rosemary sprigs on top
