Ingredients:
- 200g firm tofu, drained and crumbled
- 1/4 cup chickpea flour
- 1/4 cup water
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- 1/4 cup chopped spinach
- 2 tablespoons nutritional yeast
- 1 teaspoon turmeric powder
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions:
In a bowl, mix together crumbled tofu, chickpea flour, water, nutritional yeast, turmeric powder, garlic powder, salt, and pepper until well combined
Heat olive oil in a non-stick skillet over medium heat
Add diced bell peppers and onions to the skillet and saut until they start to soften, about 3-4 minutes
Add chopped spinach to the skillet and cook for another 1-2 minutes until wilted
Pour the tofu mixture over the sauted vegetables in the skillet, spreading it evenly
Cook for 4-5 minutes, or until the bottom is golden brown and the edges start to lift
Using a spatula, carefully flip the omelette and cook for an additional 3-4 minutes until the other side is golden brown
Once cooked through, remove from heat and serve hot
