Paleo Banana Bread French Toast

This gluten-free and dairy-free Banana Bread French Toast is a Paleo take on a traditional favorite. Its the ideal way to begin the day with a satisfying and wholesome breakfast.

Ingredients:

  • 2 ripe bananas, mashed
  • 4 large eggs
  • 1/4 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • Coconut oil or ghee for frying
  • Fresh berries and pure maple syrup for serving optional

Instructions:

Mashed bananas, eggs, almond flour, coconut flour, baking soda, nutmeg, cinnamon, salt, and vanilla extract should all be combined in a mixing bowl

The batter is formed by thoroughly mixing

Grease the surface of a skillet or griddle with a small amount of coconut oil or ghee while its hot

Make sure both sides of the Paleo banana bread slices are coated by dipping them into the batter

Let any extra batter run off

After putting the battered slices onto the hot skillet or griddle, cook them for two to three minutes on each side, or until they are cooked through and golden brown

If preferred, top the warm Paleo Banana Bread French Toast with a dollop of pure maple syrup and fresh berries
