Ingredients:
- 3 lbs ripe tomatoes, chopped
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup apple cider vinegar
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1/2 tsp red pepper flakes
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp cinnamon
Instructions:
Put all ingredients into a big pot and stir
Over medium-high heat, bring to a boil while stirring frequently
Lower the heat to a simmer and cook, stirring periodically, for one and a half to two hours, or until the mixture thickens and takes on the consistency of jam
Take it off the stove and give it some time to cool
Jam should be transferred to sterilized jars with a 1/4-inch headspace
To guarantee appropriate preservation, seal the jars and process in a boiling water bath for 15 minutes
