Gluten-Free Choc Chip Cookies

Delicious gluten-free choc chip cookies that are soft, chewy, and full of chocolatey goodness.

Ingredients:

  • 1 cup gluten-free all-purpose flour
  • 1/2 cup almond flour
  • 1/2 cup coconut flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup coconut oil, melted
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup gluten-free chocolate chips

Instructions:

Preheat your oven to 350F 175C and line a baking sheet with parchment paper

In a medium bowl, whisk together the gluten-free all-purpose flour, almond flour, coconut flour, baking powder, baking soda, and salt

In a large mixing bowl, cream together the softened butter, melted coconut oil, granulated sugar, and brown sugar until smooth

Beat in the eggs one at a time, and then stir in the vanilla extract

Gradually add the dry ingredient mixture to the wet ingredients, mixing until well combined

Fold in the gluten-free chocolate chips

Using a cookie scoop or tablespoon, drop rounded balls of cookie dough onto the prepared baking sheet

Gently press down on each cookie to slightly flatten

Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown

Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely
