Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup coconut milk
- 1/4 cup shredded coconut
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
Instructions:
Put flour, sugar, baking powder, and salt in a bowl and mix them together with a whisk
Use a whisk to mix the egg, melted butter, shredded coconut, and vanilla extract in a different bowl
Add the wet mixture to the dry mixture and mix it in just a little
Dont mix it too much; lumps are fine
Set a griddle or nonstick skillet over medium heat and use cooking spray or butter to lightly coat it
For every pancake, put 1/4 cup of the batter on the griddle
Once the top starts to bubble, flip it over and cook the other side until its golden brown
Serve hot with extra shredded coconut and maple syrup on top
