Tomato Carpaccio is a simple but elegant dish that shows off the bright flavors of ripe tomatoes. The richness of extra virgin olive oil, the sourness of balsamic vinegar, and the freshness of basil and arugula make the flavors even better. This appetizer is great for summer parties because its cool and looks good.
Ingredients:
- 4 large ripe tomatoes
- 1/4 cup extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 1/4 cup fresh basil leaves, thinly sliced
- 1/4 cup Parmesan cheese shavings
- Salt and black pepper to taste
- 1/4 cup arugula leaves for garnish
Instructions:
After you wash and dry the tomatoes, use a sharp knife or mandolin to cut them into thin slices
To make a carpaccio effect, put the tomato slices on a serving platter so that they just barely overlap
Spread balsamic vinegar and extra virgin olive oil over the tomato slices
Spread out the fresh basil leaves and Parmesan cheese shavings on top of the tomatoes
Season with black pepper and salt that you just ground yourself
Add some arugula leaves to the dish to make it look fresh and colorful
Serve right away as a starter or side dish
