A classic chicken noodle soup that makes you feel better on cold days.
Ingredients:
- 2 cups shredded cooked chicken
- 8 cups chicken broth
- 1 cup carrots, sliced
- 1 cup celery, chopped
- 1 cup onion, finely diced
- 2 cloves garlic, minced
- 1 cup egg noodles
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions:
Put olive oil in a big pot and heat it over medium-low heat
Put in the carrots, onions, and celery
Saut until the meat is soft
After you add the garlic, saut for one more minute
Add the chicken broth, bay leaf, thyme, salt, and pepper
Bring to a boil, then lower the heat and let it cook for 10 minutes
Add egg noodles and chicken shreds
Keep cooking until the noodles are done
If you need to, change the seasonings and serve hot
