Ingredients:
- 1 cup mixed beans pre-soaked
- 4 cups vegetable broth
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions:
In a large pot, heat olive oil over medium heat
Add diced onion and garlic, saut until fragrant
Add carrots and celery, cook until slightly softened
Add mixed beans, vegetable broth, diced tomatoes, thyme, rosemary, salt, and pepper
